Organic Strawberry Chia Seed Spread

Strawberries are beautiful and delicious as well as full of natural juices. My family loves strawberry spreads and I love creating ones they’ll eat. Chia seeds are full of nutrition and give a gelatinous texture. Strawberries and chia seeds make a sweet friendship. I hope you enjoy making my Organic Strawberry Chia Seed Spread.

In this recipe I use local organic strawberries as I have a local farmer that grows them year round and I live close to the equator and sunshine is abundant. However you can use store bought organic strawberries. I always rinse my strawberries well. You can also decrease the amount of sugar. This is the sweetness my family likes. I use food grade essential oil however you can use fresh squeezed lemon juice from 1 lemon just increase the chia seeds by 1 tablespoon.
Be gentle with the creation, stir gently as strawberries will get soft and release their juices.
A little trick at the end is to be patient and let it cool a bit once poured in the mason jar then mix well once with a spatula. Refrigerate to cool complete however spread can be eaten warm. It’s great on toast or used as the jelly in a peanut butter and jelly sandwich. I love it as a late night snack when I have a large workload to complete.

Perfect on a warm biscuit with butter & hot tea.

Recipe makes Approximately 1 quart

Materials Needed:

Fresh Strawberries
Organic Sugar
Organic Chia Seeds
Food Grade Essential Oils
1 Mason Quart Jar
Large Cooking Sauce Pan
Silicone Spatula
Mason Jar Funnel
Measuring Cups & Spoons

Ingredients (US Terms):

– 4 cups Organic Strawberries hulled and cut in half
– 1 1/2 cups of Organic Sugar
– 5 Tablespoons Organic Chia Seeds
– 12-14 Food Grade Lemon Essential Oil

In a large saucepan on medium heat combine strawberries, sugar and essential oil. Gently mix every 30 seconds. Once the sugar liquefies turn heat to low heat and cook for 15 minutes.
Gently mix in chia seeds and continue to cook for 5 minutes.

Using mason jar funnel poor in quart mason jar and gently stir mixture
Let sit for 15 minutes and stir once more.

You will notice the chia seeds soak up liquid and spread with thicken quite a bit once It’s completely cooled. It doesn’t have to be completely cooled to refrigerate. Seal with a mason jar lid and store in refrigerator. Eat within 7-10 days.
